Introduction to Fermentation

A demonstration masterclass with tips and tasting

Join us for a fermentation masterclass where Josephine will guide us through the essentials of fermentation, demystify what’s happening in the jar, and show us how to confidently bring these techniques into our own kitchens.

At a gentle pace, you will allow your palate to become a tool for connecting with the invisible world of fermented foods. You’ll experience fermentation with all your senses: the crunch of fresh vegetables, the shifting scent of brine, the subtle changes in colour and texture, and the deep, complex flavours that only time and microbes can create.

  • A mindful tasting of different ferments with complex and deep flavours

  • A beginner-friendly understanding of what fermentation is and why it matters in your everyday life

  • The core principles for safe, successful ferments at home (salt, time, temperature, cleanliness)

  • A guided walkthrough of making a lacto ferment with tips to adapt it to seasons and ingredients

  • Practical troubleshooting: what’s normal, what’s not, and how to adjust

  • A new way of thinking about food as a relationship between plants, microbes, and our bodies
